Convocation ‘23: Meghan Markowsky, MSc Animal Science

As a masters student in the Animal Science program in the Department of Agricultural Food & Nutritional Science, Meghan Markowsky’s research addressed meat quality in beef, specifically related to the characteristics of collagen under different scenarios. Meat quality is one of the many disciplines that falls within the research area of genetics and genomics in the animal science program. 

“Consumer acceptability of meat is dependent on eating satisfaction, of which meat tenderness is a principal factor,” explains Meghan, adding that while much work has been done to improve meat quality, the characteristics of intramuscular connective tissue can still affect that experience.

The animal science program is an end in itself, preparing students for a career in the beef industry, for instance, but it also provides the science-based groundwork for students who wish to become veterinarians, like Meghan.

As an undergraduate, Meghan majored in Companion & Performance Animals. Identifying as  Métis, she received the Indigenous Student Award and John Prentice Scholarship in Beef Genomics for her scholarly activities. 

Hoping to apply the knowledge gained during her master’s degree (as well as her love of animals!) Meghan has already begun the process of applying to a number of veterinary schools.

What led you to choose your current area of study, and why the U of A for your studies?

I wanted to improve my application for vet school and contribute to the body of knowledge for animal science, and I live in Edmonton and completed my undergrad here.

What is one of your favourite memories from your time at the U of A?

Some of my samples were sensitive to light, so I had to work in a curtained off dark corner of the lab. A few times the cleaning staff would come by and, thinking no one was there because all the lights were off, get spooked when I suddenly appeared. It always made for a good laugh!

Tell us about your favourite professor and/or class.

Heather Bruce has been a fantastic supervisor and supportive professor.

Did you face any significant obstacles or challenges during your program?

COVID really set me back because it interrupted lab work and halted my whole degree program since I could not continue at that point without results. It did allow for a good mental break however.

What advice do you have for current and future students?

Follow up regularly with your supervisor! 

How do you plan on celebrating convocation?

Eating good food.

What's next after graduation?

Hopefully vet school!
